In this job we are going to see a research that was done in the company “PASTELERÍA ROMANELLO” this study show us the new state of the company in the activities involved during the production of empanadas and pasteles de hojaldre, after that we will do the analysis of the data that was taken to identify the critical activities inside of the productive process, beginning with this information we will generate a propose to implement some Lean Manufacturing philosophy tools. In the propose that was done it will indicate step by step how implement the different tools. The implementation will focused in the critical points which was found in the actually state, but the tools will be developed and implement for every production department and each activity involved. Also the process of training will be for every person that work for the production area, with the direction of the manager. The target of the work it is increase the utility of the company throw the optimization the production area. It will be with the implementation of tools that do not have an expensive investment.
