This monograph describes the design of a hazard matrix for the Delikatessen Donuts Donuts microenterprise, which identifies the risks that non-recognition of internal problems brings in two important aspects: production and professional risks. To fulfill the objective, a Descriptive methodology was proposed where through the instruments such as the interviews and talks with the Manager and the employees of the microenterprise and the evaluation of the production processes and procedures, the main characteristics and factors are identified. that affect not only the production, but also the work of the employees, thus achieving the essential steps for the construction of the matrix. The results of the hazard matrix contributed to comply with the Colombian Legislation that regulates this type of company and also to minimize risks for both workers and production within a framework of culture of prevention and safety.
